The manga of Yakitate!! Japan first began as being published in Shounen Sunday. There are 20 volumes to date in Japan (as of November 2005).
Recently, the French publisher Akata/Delcourt has picked up Yakitate!! Japan to publish in France. Also, Viz has picked up the manga to localize for the USA, with a release date of September 12, 2006 for the first volume. For more US release dates,

SnoopyCool began scanlating the manga in 2003 and continued it all the way up to the end of volume 17.
Minna-Scan picked up the manga at chapter 153 and is currently ongoing.
